I do love a nice lentil soup, simple to make, in fact it pretty much makes itself whilst I’m sat contemplating life.

1/2 a cup of red lentils

500ml of vegetable stock

1 large teaspoon of grainy mustard

6-7 sloshes of gluten free vegan Worcester sauce, yes it does exist

1 tin of tomatoes

500g of fresh plum tomatoes chopped

Throw the lot in a pan, bring to a low simmer, stir, and put a lid on the pan and cook on a slow rolling simmer for 30 minutes.  Blend and eat. Yes life can be that simple.
