Fruity rice salad

A great opportunity to boost your immunity and heart health with this simple rice salad for lunch.

1/4 cup of brown rice cooked and cooled

1/2 a pomegranate, the seeds knocked out

6 small cherry tomatoes sliced

2 inches of cucumber diced and sliced

1/2 a lime juiced

A small dribble of Fushi black cumin seed oil

1/4 teaspoon of Pine Bark and Berry Powder

1/2 tablespoon of sunflower seeds

1 teaspoon of pumpkin seeds

1 teaspoon of currants

Make the dressing, squeeze the lime into a cup, and add the black cumin seed oil, it’s strong so a little goes a long way, and add the teaspoon of pine bark and berry powder. Mix together, and pour over the rest of the ingredients. Add a little sauerkraut on the side and it’s an immune boosting powerhouse for this season.

You can swap the brown rice for cauliflower rice if you want a lower carbohydrate version and for it to be a raw dish.
