mushroom soup2

A rather nice earthy tasting soup, which is very brown!! You might want to experiment with the mushrooms that you use for the different flavours and soaking them in tamari will give them a different flavour again that you might like to try as well.

1 large can of butterbeans

1 cup of dried mixed mushrooms, I used shitake, porcini, and oyster

1 cup of chopped fresh closed cap mushrooms

2 tblsp dried onion or you can use a fresh onion I just had dried to hand.

1.5 pints of water

1.5 tblsp brown rice miso

1 large tsp of mustard

sea salt and pepper to taste.

Soak the dried mushrooms and onions for 1 hour in water.

Keep the water and add the rest of the ingredients and bring to the boil, then drop the heat to a very low simmer. Put a lid on the pan and cook for 40 minutes.

Blend with a hand blender, add salt and pepper to taste. Eat…mmm. mushroom soup1
