Simple foods are just the best I find, why complicate life when it could be so simple. Make this for a lovely easy lunch.

75g of Bulgar Wheat cooked in vegetable stock

2 teaspoons of tamarind found in Indian shops

1/2 lemon juiced

steamed broccoli

2 tablespoons of pine nuts

3 tablespoons of cooked chickpeas

Whilst the bulgar wheat is cooking in the vegetable stock, heat up a small pan and put the pine nuts into it, to brown them off. Don’t allow them to burn you are just changing the colour slightly. Place your cooked bulgar wheat into a bowl with the tamarind, and lemon juice and simple stir through together until it’s all coated.

Put the broccoli in a steamer over the bulgar wheat whilst it’s cooking to save on fuel.

Season to taste, and then add in the steamed broccoli. That really is all there is to it.
